What’s the difference between your Napa Cabbage Kimchi and Radish Kimchi?Our Napa Cabbage Kimchi is the most traditional and classic form of kimchi, with a slightly softer texture and balanced flavor that pairs well with a variety of dishes and great for cooking into different dishes. Radish Kimchi (also called Kkakdugi) is crunchier and bolder in flavor, offering a spicier kick and a more robust texture and works great as side dishes. Both are fermented for gut health but provide different taste and texture experiences.

How long does K-Mama kimchi last?Kimchi is naturally fermented, which means it continues to change in flavor over time. For the best taste, enjoy your kimchi within 1 month of purchase. After this, it will continue to ferment in your fridge, developing a deeper, tangier flavor. Even after months, it’s safe to eat, and the probiotics only increase!

How should I store K-Mama’s kimchi and pickles?All of our kimchi and pickles should be kept refrigerated to maintain freshness and slow down the fermentation process. For best results, keep the jars sealed and place them in the fridge as soon as you receive your order or whenever you have access to a refrigerator. If you’re traveling with your kimchi or pickles, they can be kept at room temperature for up to 12 hours or more, but it's best to refrigerate them whenever possible. Unlike heat-treated pickles, our products should not be stored in the pantry. Whether the jars are opened or unopened, please make sure to refrigerate them as soon as you get home to preserve their freshness and flavor. They can be enjoyed fresh within 1 month, but the longer they’re stored, the deeper and tangier the flavors become, which is great for gut health!

However, for best results, we recommend refrigerating them whenever possible, especially if you're traveling for an extended period. Make sure to refrigerate the products as soon as you have access to a fridge (in your hotel room) to maintain their freshness and slow down the fermentation process. Remember, our products are not heat-treated like store-bought pickles, so they should never be stored in a pantry. Whether the jars are opened or unopened, always refrigerate them as soon as you get home to preserve their quality.
